When climate change started increasing the number of overripe cherries, the Mió team got creative. Their solution?
MAGIC, that's what! Well, science actually, but it tastes like magic. The cherries go through a 144-hour dance party of fermentation.
The overripe cherries alternate between anaerobic environments (fancy talk for "no oxygen") and oxygenated water baths, creating the PERFECT conditions for those natural enzymes to transform starches into delicious sugars!
